If you want to go somewhere and immerse yourself in horsemanship here are a few that would be good :
Martin Black horsemanship school America - go for a month, a friend of mine just came back from this and he loooooooooooved it. You just arrive and work with Martins young horses, do cow work, real hard core horse training.
Kathleen Lindley America is running 'bring your horse and learn' residential weeks in America as well. Maybe a bit more suited to those from the States.
Brad Weeks Australia - this is where I started to learn - just email him (contact details on instructors page). He's got an equestrian centre so can arrange to teach you on his horses and then you can watch what else is going on as well (teaching other students, starting horses, retraining horses with issues, etc) Any level is ok, but be prepared to work! You can work towards QNH exams as well here.
Mt Lyford Horse treks New Zealand - This is a really nice way to do either NH lessons or treks, on any budget - you can go from backpacking up to staying at a lodge. This would be the more relaxed option as you won't have to start any colts...! Cathy & Kate are lovely, go from 2 hour lesson up to a week or more....
