As with most things, over time you get different trends. So we see new stuff, we buy it, we go back a week later, more new stuff, we buy it, it goes on. I'm as fallable as the next person when I see a nice pair of shoes, and I have a collection of 'taxi' shoes!!
Nosebands
With horses, you should try to buy what you actually need, and what your horse needs, not just whats nice and shiny and tied up in a fancy package.
Start off by keeping it simple. One thing you see a lot is new bridles automatically coming with flash nosebands.
Now unless you've got the most valid reason under the sun and you MUST have your horse in a flash, don't buy this bridle. Ask for one with a normal bog standard noseband - ie a strip of leather which goes from one side of horses face to the other.
Its not about looking 'up to date' its about having nice comfortable equipment for your horse to help him to do the things you want him to do. All horses are born beautiful anyway. ;D
BITS
If you're thinking about bits for your horse, firstly the idea is that you get a bit which actually fits your horses mouth - both length wise, and also thickness, and action (can depend on shape inside horses mouth).
Sometimes, if you own a horse who's hard to stop, you may find yourself getting hopefully and misty-eyed when you walk past the shiny stainless steel bits section of your local tack shop.... we are all partial to gadjects ;D Sadly, horses don't liked gadgets that much. They oftern work better with a great trainer who is williing to figure out why things aren't working, rather than a trainer who's quick to buy a more uncomfortable bit.
